Amaranth

Amaranth is considered a “wonder grain of the Incas”: In the early Mesoamerican culture, it was a sacred food for many indigenous peoples that was used in ritual ceremonies. For the Aztecs, Amaranth had more value than gold.

Botanically, amaranth is one of the fox tail plants. There is not a grain but a grain-like plant – a so-called Pseudocerialie. Her small cores have a slightly sweet, mildly nutty flavor and are considered very nutritious. Amaranth is rich in calcium and iron, and contains valuable fatty acids and fiber. It also has 14 percent of a high protein content and is suitable for a gluten-free diet.
